Ingredients
- 2 tbsp olive oil
- 500 g chicken thigh fillets, diced
- 1 brown onion, finely diced
- 2 cloves garlic, minced
- 1 medium carrot, diced
- 1 cup frozen peas
- 1½ cups long grain rice
- 3 cups hot water
- 1 tsp Australian Bone Broth Co Turmeric Bone Broth Concentrate
- Salt and freshly cracked black pepper, to taste
- Fresh parsley, chopped, for serving
- Lemon wedges, to serve (optional)

Method
Step 1
Heat the olive oil in a large deep frying pan over medium heat.
Add the diced chicken and cook until lightly browned.
Remove and set aside.
Step 2
Add the onion and carrot to the same pan.
Cook for 4–5 minutes until softened.
Stir in the garlic and cook for a further minute.
Step 3
Add the rice and stir for 1 minute to lightly coat the grains.
Pour in the hot water.

Step 4
Return the chicken to the pan.
Bring to a gentle simmer.
Cover with a lid and cook for 18–20 minutes.
Step 5

Step 6
Fluff the rice gently with a fork.
