Ingredients
2 tsp bone broth concentrate
250ml hot water
1 pack noodles
1 spring onion, sliced
1 soft-boiled egg
½ cup cooked chicken or beef, optional
½ cup spinach
1 tsp soy sauce, optional
1 tsp sesame oil, optional
Method
Mix bone broth concentrate with hot water.
Cook noodles and drain.
Heat the prepared broth gently.
Place noodles in a bowl and pour over broth.
Add toppings and serve hot.
Easy variations
Add more vegetables
Try mushrooms, bok choy, peas, corn or shredded carrot.
Make it heartier
Add leftover roast chicken, sliced beef, tofu or dumplings.
Add extra flavour
Top with chilli oil, crispy onions, sesame seeds or fresh coriander.
Tips
start with 2 teaspoons in 250ml hot water and adjust to taste
use a little less soy sauce if you prefer a lighter flavour
